Hete Bliksem – This is heaven!

‘Hete Bliksem’ is my all time favourite Dutch dish! ‘Hot lightning’ as it’s called in English is a delightful combination of potatoes, apples & beef. Still, the secret ingredients are actually cinnamon & honey. What follows is a slightly simplified version, so if you’re a real dutch (wo)man, don’t expect this to be what your mum would cook for you. Ready?

Simple Hete Bliksem

  • 1 1/2kg potatoes
  • 1 1/2kg apples
  • 500g minced beef
  • 1 big onion
  • butter
  • cinnamon, honey, nutmeg, salt & pepper


35 minutes, Serves 4

Peel and dice the potatoes and apples. Chop the onion. Then boil the potatoes. While your potatoes are cooking, take a second pot for the diced apples and add a cup of cold water. Close with a lid and cook until the water’s boiling.The apples will soften and sort of turn into an almost ready applesauce.
Meanwhile sauté the onion with quite some butter or oil, then add the beef and stir occasionally. When the potatoes seem ready, add meat, your self-made (yay!) applesauce and mash everything. Add a spoon of cinnamon, some honey, salt & pepper and stir properly once again. The very moment you think this is the most delightful thing you’ve ever tasted, you know, your dish is ready.
