Banana Bread for vegans with a sweet tooth

This is a slightly different kind of a minifeast story I guess; One that might describe life in Berlin a bit.

A few nights ago we went out and on our way home we were joking about making banana bread for breakfast. I had a feeling what banana bread consists of and I figured that adding rum & maple sirup would give it the right flavour. From what I remembered, we did not have any rum at home.

Now as getting alcohol at any possible or impossible time never seems a problem in this city, I knew we can get some in our street.

Berlin’s got a culture of Spätis all around town. Spätis are open almost 24/7 and famous for their selection of beer they have on display. Spätis – as they’re called by the Berliners – were established during the DDR.
For the sake of justice, people received vouchers for rations of food. Because of shift work, not everyone was able to cue up at the same time and they founded Spätis; Stores that are open late to make groceries available to all people and in thus at different times.

The popularity of Spätis is still astonishing, which means that there are now also quite some in the western part of the city. It’s simply the perfect place to get alcohol when you’re out.

Why am I telling you this?

Let’s get back to the story of our banana bread.

I agreed to make some but the only ingredient that wasn’t in the fridge & apparently not in stock of any of my flat mates was rum.

We walked into a Späti and I said I’d like to get a small bottle of rum. He pointed at the shelf. I smiled & said, “I see but there’s no rum. I need rum for baking.”

Somehow I believe it was for the first time in his life someone tried to buy alcohol for baking on a Friday night. As these Berliners are really friendly, you could see his focused face trying to find a solution to please us. There was an open bottle of rum on the counter. He poured some into a coffee cup and handed it over for 2 euros. Issue solved.

Somehow, the banana bread was just the right Katerfrühstück, which some of us urgently needed as it turned out.

Vegan Banana Bread

  • 4 bananas
  • 2 cups flour
  • 2/3 cup cane sugar
  • 1 tbs baking powder
  • 1/2 tbs baking soda
  • 1/2 cup melted margarine
  • 3 Tbs maple syrup
  • 1/3 cup rum (from Späti)
  • 2/3 t salt
  • 1 Tbs white vinegar
  • 1/2 cup walnuts

Instructions

Hands on 10 mins, hands off 1 hour

Preheat the oven at about 180°C. Mash the bananas. Mix all ingredients together but leave out the walnuts. As soon as you’ve got a smooth batter mix in walnuts. Pour mixture into a buttered loaf pan & bake for about an hour until golden brown.
